PREPARATION:
1. Soak the vermicelli in water for 10 minutes, drain and set aside.
2. Pour a small amount of oil into a wok and place over medium heat. When the oil is hot, pour the beaten eggs in and swirl to form a thin omelette. Fry until the eggs are done, then remove from the wok. Roll the omelette and finely slice into thin strips.
3. Sauté garlic and shallot in oil over low heat until golden and fragrant. Add the beancurd, stirringto combine. Season with tamarind juice, sugar, fish sauce and fermented soy beans; stir to mix well. Add the vermicelli and stir until dry. Turn off the heat.
4. Arrange the fried vermicelli on a serving dish, sprinkle the shredded omelette, spring onion, coriander and chili on top. Serve hot with fresh bean sprouts, lettuce, spring onion and wedges of lime.
