Spicy Stir Fry Scallops Recipe (Hawy Shell Phat Chaa)

PREPARATION:
1. Wash the scallops well and drain.

2. Fry the curry paste in oil until fragrant, add the scallops and stir thoroughly. Follow with the wild ginger and green peppercorns, stirring well.

3. Season with sugar and fish sauce. Add chicken stock, and combine well.

4. Transfer to a serving dish, sprinkle red chili strips over the top and garnish with a sprig of sweet basil, serve immediately.

1/4 cup
finely shredded wild ginger (krachai)

red spur chili, finely sliced
1 tbsp
fish sauce

sugar
3 tbsp
red curry paste
1/2 cup
chicken stock
3 tbsp
vegetable oil
