PREPARATION:
1. To make the tamarind sauce: mix tamarind juice, sugar fish sauce and salt together. Place the mixture in a pan and stir over low heat until it becomes clear and syrupy; remove from the heat and put aside.
2. Clean the prawns, shell and de-vein. Keep the heads and tails intact and trim off the feelers. Drain well.
3. Heat the oil in a wok over high heat, add the prawns and stir-fry until just done. Pour the tamarind sauce over the mixture, stirring well. Arrange on a serving dish, sprinkle fried shallots and fried chilies over the top and garnish as you like before serving.
