PREPARATION:
1. Wash the mushrooms, trim off the hard stems, and cut into pieces.
2. Clean the prawns, shell and de-vein. Remove the heads, but keep the tails intact.
3. Heat the oil until hot and sauté the mushrooms until done. Add the stock, fish sauce, oyster sauce and seasoning sauce, stir well and cook for a few minutes. Then, add the prawns and cook until done.
4. Mix the wheat flour and water to form the batter; pour in and stir until thick. Add spring onions, and stir well.
5. Arrange on a platter, garnish with red chili and spring onion, best when served hot.
