PREPARATION:
1. Clean the Shiitake mushrooms, trim off the hard stems, and cut into pieces.
2. Clean the ear mushrooms well, trim off the hard part, and cut into pieces.
3. Heat the oil in a wok over medium heat. Sauté the lily buds for a few minutes, add mung bean noodles and chicken stock before adding both types of mushrooms; stir together well.
4. Season to taste with sugar; fish sauce and soy sauce. Stir to combine, then add celery. When everything is cooked through, spoon onto a serving dish, garnish with a sprig of celery and serve.
