PREPARATION:
1. Wash the bean sprouts well. Soak in water mixed with some vinegar for 10 minutes drain and set aside.
2. Wash the Chinese chives, cut into short lengths about 1" long. Remove the seeds from the red chili and cut into strips.
3. Sauté garlic in oil over medium heat until golden, then remove from the wok Turn up heat to high, add bean sprouts and Chinese chives, stirring quickly. Season with soy sauce, add chili and stir well. Remove from the heat and transfer to a serving dish. Sprinkle fried garlic over the top as a garnish.
