PREPARATION:
1. Heat the oil in a wok over medium heat. When it is hot, fry-one at a time-the holy basil leaves, kaffir lime leaves, galangal, lemongrass, and cashew nuts. Fry the shallots and garlic until golden; remove from the wok.
2. Drain away the frying oil, leaving only I tbsp. Use this to sauté the roasted chili paste, sugar and fish sauce over low heat.
3. Add hot chili and fried herbs, toss well and remove from the heat.
4. Garnish with slices of red chili and serve.
