PREPARATION:
1. Pour the oil into a wok over high heat. When it is hot, turn down the heat, fry about two cups of the basil leaves quickly, and then remove them from the oil and put them on absorbent paper to drain.
2. Place the oil in which the basil leaves were fried on medium heat. When hot, put in the garlic, hot and spur chilies, and pepper, fry until fragrant, and then add the ham and stir fry.
3. Season with the sugar, soy sauce, and fish sauce. Add the remaining basil leaves, and when they are done, put in the rice, and stir fry until it is ready.
4. Dip up the fried rice onto a plate, sprinkle on the fried basil leaves.
