PREPARATION:
1. Heat the oil in a wok. When it is hot fry the garlic until fragrant, and then add the carrot and mushroom. When they are done, add the rice and stir fry.
2. Season with the sugar and soy sauce and fish sauces and continue stir frying. When ready, dip up onto a plate and sprinkle with the cashews, and serve.
