PREPARATION:
1. Wash the beancurd, pat dry and slice into long sticks. Deep-fry in hot oil until golden; remove from the oil and drain.
2. Pour 72 tbsp of oil in a wok, add the soba noodles and turn the heat up to high. Add the flowering cabbage and season with I tsp soy sauce. Stir quickly to combine. Remove from the wok and set aside.
3. Pour the remaining oil into the wok. Use to sauté the garlic until golden and fragrant. Add the carrot and onion, stirring well. Follow with the snow peas; season with soy sauce, sugar and ketchup.
4. Pour in the stock and fried beancurd. When it comes to a boil, add the tapioca batter and stir until the sauce thickens.
5. Spoon over the fried soba noodles, sprinkling with pepper and sesame seeds on tosp. Add a personal touch with carved carrot. Delicious hot!
