Spicy Fried Brown Noodles

PREPARATION:
1. To make the seasoned sauce: thoroughly pound dried chili, shallots and shrimp paste together Heat the coconut milk until oil surfaces, add the chili mixture and fry until fragrant. Season to taste with sugar fish sauce, tamarind juice and ketchup. Stir to combine, transfer to a bowl and set aside.
2. Soak the noodles until tender and drain. Wash the crab, removing any inedible parts; cut into 4 pieces. Fry the crab in hot oil until golden-crisp and done. Remove from the oil and drain.
3. Sauté the seasoned sauce in olive oil until fragrant, add the fried crab and stir to combine. Follow with the noodles, stirring over low heat until the noodles are tender and dry. Transfer to arrange on a serving dish.
