Fried Vermicelli with
Crabmeat Gravy Recipe |

PREPARATION:
1. Soak the vermicelli in water for 10 minutes, drain and set aside. Wash the snow peas, snipping off the tips and removing the strings.
2. Fry the soaked vermicelli in 3 tbsp of oil over high heat until fragrant; transfer to arrange on a serving dish and put aside.
3. Sauté garlic in the remaining oil over low heat until fragrant, add all the vegetables and stir to combine. Pour in the chicken stock, season with light soy sauce, then add the crabmeat. Mix the corn flour with water and stir in to thicken the sauce. Spoon over the fried vermicelli, garnish with celery sprig and slices of red chili, and serve hot.
