PREPARATION:
1. Wash the Chinese kale and peel off the hard outer skin. Separate the leaves and stems; cut the leaves into pieces about 1" long and slice the stems diagonally.
2. Fry the noodles in oil over medium heat, season with oyster sauce and soy sauce. Stir well.
3. Add the remaining ingredients, and stir-fry until cooked through. Arrange on a serving dish and serve with pickled chili in vinegar as a traditional condiment. with pickled chili in vinegar as a condiment.
