Fried Egg Noodles with Water Mimosa Recipe (Ba Mee Pad Phak Kra-chet)

PREPARATION:
1. Cook the noodles in boiling water until tender; soak in cold water and drain.

2. Sauté minced pork in oil over medium heat until done. Add dried radish, mushrooms and beancurd, stirring well. Then add the noodles and stir to mix well.

3. Season to taste with all the seasonings, stirring to combine.

4. Turn the heat up to high, add the mimosa and chicken stock. Fry until the mimosa is done, add the roasted peanuts and stir well. Arrange on a serving dish and serve with wedges of lime.

flat egg noodles
1/2 cup
minced pork
1
firm beancurd, cut into small pieces
1/2 cup
straw mushrooms, thinly sliced
6
Shiitake mushrooms, soaked and cut into wedges
2 cup
water mimosa
2 tbsp
chopped dried radish

3 tbsp
ground roasted peanuts
1 tbsp
sugar
1.5 tbsp
light soy sauce
1/2 tsp
black soy sauce
1 tbsp
vinegar
1/2 tbsp
ground roasted dried red chili
1/2 cup
chicken stock
2 tbsp
vegetable oil
