Fried Egg Noodles with Minced Pork & Ivy Gourd Recipe (Ba Mee Phat Muu Sap Bai Tamleung)

PREPARATION:
1. Cook the instant noodles in boiling water until tender; soak in cold water and drain.

2. Sauté garlic in oil over low heat until golden and fragrant, add the minced pork and Sauté until it turns white and is done. Follow with the onion, carrot and Shiitake mushrooms; continue cooking until the carrots are done. Then add the tomato, stirring to combine well.

3. Season to taste with soy sauce, fish sauce, sugar and ketchup. Mix the flour with the water and stir in to thicken the sauce. Add the cooked noodles and ivy gourd, stirring again.

4. Arrange on a serving dish and enjoy while steaming hot.

instant egg noodles
1 cup
blanched ivy gourd leaves
1/2 cup
minced pork
1/4 cup
onion, cut into small slices
1/4 cup
carrot, cut into small pieces

tomato, cut into small pieces
6
Shiitake mushrooms, soaked and cut into small slices

1 tbsp
finely chopped garlic
2 tbsp
tapioca flour
2 tsp
fish sauce
2 tsp
sugar
2 tsp
soy sauce
2 tbsp
tomato ketchup
1/2 cup
water
3 tbsp
vegetable oil
