2. Heat two tablespoonful of the oil in a wok until very hot. Add the water mimosa
sprinkle with water, and fry over high heat, stirring vigorously; then dip out onto
platter.
3. Heat the oil in a wok. When hot, fry the pounded garlic and chilies. When fragranrt,
add the chicken, fermented soybeans, oyster sauce and soy sauce. Continue stir frying
until done; then dip out over the water mimosa.
