PREPARATION:
1. Pound the garlic and the hot chilies.
2. Heat two tablespoonful of the oil in a wok until very hot. Add the swamp cabbage,
sprinkle with water, and fry over high heat, stirring vigorously; then dip out onto platter.
3. Heat the remaining oil in a wok. When hot, add the pounded garlic and chili. When f
ragrant, add the pork, fermented soybeans, and oyster and soy sauce. Mix well, and when
ready, dip out over the swamp cabbage.
