PREPARATION:
1. Select large mushrooms. Soak them overnight in water to soften them. Squeeze the water out until they are just damp and then place them in a colander.
2. Heat the oil in a wok. When it is hot, put in the mushrooms and fry until done and fragrant.
3. Remove all but about two table-spoonsful of the oil from the wok.
4. Add the soy sauce, sugar, and the cup of the water in which the mushrooms were soaked. Stir fry until the water has evaporated and the sugar and soy sauce have penetrated the mushrooms, and then turn off the heat.
