PREPARATION:
1. Scale the fish, slit down the middle and remove the inside. Rub well with salt to
remove fishy smell, wash throughly. Slit diagonally on both sides and allow to drain.
2. Heat the oil in a wok over medium heat, fry the fish until golden and crispy. Remove
from the oil and arrange on a serving dish.
3. Mix sugar and fish sauce together; stir until sugar dissolves. Add the chili
and mango, stirring well.
4. Spoon sauce over the fried fish and sprinkle with fried garlic before serving.
Provide a finishing touch with a sprig of sweet basil.
