PREPARATION:
1. Cut the kidney in half, remove the white membrane in the middle, and then wash well. Cut it into bite-size pieces, and then leave these to soak in water for 15 to 20 minutes.
2. Pour the stock into a pot and heat it to boiling. Put in the spareribs and boil them until tender. Now, add the rice, kidney, and soy sauce, boil a while longer, and then turn off the heat.
3. Dip the soup into a bowl and sprinkle with the dried salted vegetable, pepper, spring onion and coriander, and garlic.
