PREPARATION:
1. Mix the sugar, fish sauce, lime juice and roasted chili paste together.
Add the hot chilies, stirring to combine.
2. Wash and cut the lettuce into pieces, drain and keep cool.
3. Place the tuna in a mixing bow, add the lemongrass, shallots, spicy
dressing and cherry tomatoes; toss lightly to mix. Arrange the lettuce on
a serving dish, spoon the tuna salad onto the lettuce, garnish with mint
leaves and serve.
