PREPARATION:
1. To make the spicy dressing: combine all the dressing ingredients and mix well.
2. Wash the wing-beans, trimming both ends. Slice crosswise into piece about 1/4"
thick. Blanch in boiling water until done, then transfer to soak in cold water to
cool before draining.
3. Combine the pork and wing-beans in a mining bowl; before adding half of the roasted
coconut and shallots. Pour the spicy dressing over the mixture and toss well. Spoon
onto a bed of red cabbage and garnish with the remaining coconut, fried shallot
and fried dried chili.
