PREPARATION:
1. Pound the chilies together coarsely in a mortar then transfer to a sauce dish.
Stir in sugar, fish sauce and lime juice and mixing well.
2. Bring the water to a boil over medium heat, blanch the pork sausage for a few
minutes, remove and drain. Transfer the sausage to a mixing bowl, toss well with
the spicy dressing and onion. Add celery and toss lightly.
3. Spoon onto a serving dish; garnish with chili strips and serve with fresh Chinese
cabbage and celery.
