PREPARATION:
1. Remove any burnt skin from the shallots and garlic, place in mortar with roasted
and pound well. Season with sugar, soy sauce and lime juice and stir well.
2. Fry the beancurd in oil over medium heat until golden and fragrant. Remove and
set aside.
3. Place the okra in a mixing bowl, add the chili dressing, beancurd, cashew nuts
and Shiitake mushrooms and toss well. Arrange on a serving dish.
