Okra Spicy Thai Salad Recipe (Yam Kra Jiab Mawn)

PREPARATION:
1. Remove any burnt skin from the shallots and garlic, place in mortar with roasted and pound well. Season with sugar, soy sauce and lime juice and stir well.

2. Fry the beancurd in oil over medium heat until golden and fragrant. Remove and set aside.

3. Place the okra in a mixing bowl, add the chili dressing, beancurd, cashew nuts and Shiitake mushrooms and toss well. Arrange on a serving dish.

small Shiitake mushrooms, soaked and blanched
1/4 cup
fried cashew nuts
1/4 cup
firm white beancurd, finely mashed
2 tsp
vegetable oil
DRESSING:

roasted dried hot chilies
3
roasted shallots
5
cloves roasted garlic
2 tbsp
palm sugar
2 tbsp
light soy sauce
2 tbsp
lime juice
