PREPARATION:
1. Mix all ingredients for spicy dressing together and set aside.
2. Wash the lemongrass, (remove some of the outer parts) and finely slice the
stems about 3" from the base. Sprinkle a few drops of lime juice over the lemongrass
and toss lightly.
3. Mix the lemongrass and minced pork together in a mixing bowl, add the spicy dressing
and toss well.
4. Spoon the mixture onto a bed of red cabbage. Garnish with fried dried shrimps,
cashew nuts, mint leaves and lemongrass before serving.
