PREPARATION:
1. Combine all ingredients for the spicy dressing and stir well.
2. Clean the fish and cut into pieces. Dip each piece into wheat flour and toss
until well coated. Deep-fry in hot oil until golden and done, then remove from
the oil. Fry the dried shrimps until crisp, remove and drain.
3. Put the lemongrass, ginger, shallot, dried shrimp and fried fish into a bowl,
add the dressing and toss well
4. Spoon the mixture onto a serving dish; and garnish with the fried chili, kaffir
lime leaves and roasted peanuts. Add some carved radish as a finishing touch before serving.
