Herbal Spicy Salad Recipe (Yam Samun Phrai)

PREPARATION:
1. Combine all ingredients for the spicy dressing and stir well.

2. Clean the fish and cut into pieces. Dip each piece into wheat flour and toss until well coated. Deep-fry in hot oil until golden and done, then remove from the oil. Fry the dried shrimps until crisp, remove and drain.

3. Put the lemongrass, ginger, shallot, dried shrimp and fried fish into a bowl, add the dressing and toss well

4. Spoon the mixture onto a serving dish; and garnish with the fried chili, kaffir lime leaves and roasted peanuts. Add some carved radish as a finishing touch before serving.

200 grams
red snapper
1/4 cup
dried shrimps
1/4 cup
young ginger, finely sliced
1/4 cup
fried dried hot chili
3 tbsp
shallot, finely sliced
10
kaffir lime leaves, sliced roughly and fried
2 tbsp
lemongrass, thinly sliced diagonally
1/4 cup
roasted peanuts
2 tbsp
wheat flour
2 cups
vegetable oil for deep-frying
DRESSING:

finely sliced hot chilies
2 tsp
sugar
1/2 tsp
salt
3 tbsp
fish sauce
3 tbsp
lime juice
2 tbsp
chicken stock
