Crispy Watercress Spicy Thai Salad Recipe (Yam watercress Krawp)

PREPARATION:
1. Mix the tempura flour, salt and pepper together, gradually stirring in cold water. Continue stirring until all the water is used up and set aside

2. Heat the tamarind juice, sugar and salt together. Stir regularly until 1/4 cup of the liquid remains. Leave to cool, add the hot chili and stir to combine.

3. Dip the watercress into the tempura batter, deep-fry in hot oil until golden and crispy. Remove from the oil. Coat the corn kernels with the batter, dropping about a spoonful into the oil; deep-fry until golden. Continue frying until finished; remove from the oil and drain.

4. Arrange the watercress and corn patties on a serving dish, pour the spicy dressing over and toss well.

INGREDIENTS:
2 cup
sprigs of watercress (about 30 grams)
1/2 cup
two-colored corn kernels
5 cups
vegetable oil for deep-frying
1/8 tsp
salt
1/4 tsp
ground pepper
3/4 cup
tempura flour
1/2-3/4 cup
very cold water
DRESSING:
5
finely sliced hot chilies
1/2 cup
tamarind juice
2 tbsp
sugar
1/2 tsp
salt
