Crispy Watercress

PREPARATION:
1. Mix the tempura flour, salt and pepper together, gradually stirring in cold
water. Continue stirring until all the water is used up and set aside
2. Heat the tamarind juice, sugar and salt together. Stir regularly until 1/4 cup
of the liquid remains. Leave to cool, add the hot chili and stir to combine.
3. Dip the watercress into the tempura batter, deep-fry in hot oil until golden
and crispy. Remove from the oil. Coat the corn kernels with the batter,
dropping about a spoonful into the oil; deep-fry until golden. Continue frying
until finished; remove from the oil and drain.
4. Arrange the watercress and corn patties on a serving dish, pour the spicy
dressing over and toss well.
