PREPARATION:
1. Combine all the ingredients for the spicy dressing together , stirring well.
2. Clean the chicken breast, pat dry and cut into thin slices.
3. Toss chicken breast with lime juice, salt and lemongrass and marinate for 15 minutes . Steam the chicken over boiling water for 5 minutes , or until done, then remove from the heat.
4. Arrange the steamed chicken on a serving dish, pour on the dressing and sprinkle kaffir lime leaves on the top before serving. Fresh vegetables added as a garnish will give a personal touch.
