PREPARATION:
1. Wash the prawns; shell, remove the heads, tails and dark vein running down the backs.
Use the side of a chopping knife to flatten and crush the prawns.Transfer to a mixing bowl
and mix with pork fat Season with sugar pepper sesame oil and salt Knead and toss against
the sides of the mixing bowl until stiff.Transferto a refrigerator and chill until the
mixture is very cold.
2. Mix all ingredients forthe sauce together and simmer over low heat until boiling and
fragrant. Remove from the heat.
3. Soak the Shanghai noodle sheets until tender, drain and cut into 6"x6" pieces. If you
are using noodle sheets, cut them about the same size. Place the sheets on a flat plate
and arrange the white Chinese chives on the noodle sheet Follow with 2 tbsp of the prawn
mixture. Fold the noodle sheets over the filling to form a square or rectangular packet;
place on a dish. Pour some sauce over. Garnish with fresh celery leave and carrot cubes.
4. Bring the water in a steamer to a boil; reduce the heat. Arrange the noodle parcels
in a steamer and steam for 7 minutes until done. Remove from the heat; best when served
hot with Chinese Worcestershire sauce.
