PREPARATION:
1. Pound the coriander roots, garlic and pepper together well (using a pestle and mortar).
Sauté in oil until fragrant add the minced pork and fry until done. Follow with the
mungbean noodles, carrot and ear mushrooms; stir-fry until cooked through. Season to
taste with soy sauce, pepper and sugar. Add spring onion, stir well and remove from
the heat.
2. Roll out the spring roll sheets, and place I tbsp of the filling in the center.
Fold the sides to cover and roll tightly. Seal the edges with egg yolk; continue
until finished. Preheat the oil over medium heat; then drop in the spring rolls and
fry until golden. Remove and drain.
3. Arrange on a serving dish- best when served with sweet Chinese plum sauce or sweet
chili sauce, and fresh sweet basil leaves.
