PREPARATION:
1. Wash the prawns, shell and de-vein, discarding the heads and tails. Use the side
of a chopping knife to flatten the prawns, then chop the prawns coarsely.Take 50 grams
of salmon fillet and cut into small pieces, reserve for garnishing. Finely chop the
remaining fillet.
2. Mix together the minced prawns, salmon and pork fat. Knead by folding and tossing
the mixture against the sides of the mixing bowl. Add tapioca flour, soy sauce, sesame
oil and pepper Keep kneading until the mixture becomes stiff.Transfer to a
refrigerator and store until the mixture becomes very cold.
3. Remove the mixture from the refrigerator and knead again until well combined. Roll
out the wanton sheets. Place I tbsp of the filling in the center of each wanton sheet.
Use your palm and fingers to gather the sides of the sheet around the filling to form
a nice dumpling; shape and make it stand upright Arrange the dumplings on greased dim
sum trays, garnish with salmon and red chili slices.
4. Steam over hot boiling water for 5-7 minutes, remove and serve steaming hot with
Chinese Worcestershire
sauce.
