Prawn Wantons  Dessert Recipe (Kiaw Kung Yok)

PREPARATION:
1. Wash the prawns, shell and de-vein. Remove the heads and tails. Use the side of a chopping knife to flatten the prawns; then transfer to a mixing bowl.

2. Add the pork fat and the remaining ingredients, kneading and tossing the mixture against the sides of the bowl until it becomes stiff. Transfer to a refrigerator and store until it is very cold.

3. Roll out the wanton sheet Spoon I tbsp of the filling in the center of each wanton sheet Use your palm and fingers to gather the sides of the sheet to make a neat packet and stand them upright Arrange on greased dim sum trays and garnish with salted egg yolk. Continue until finished.

4. Steam over hot boiling water for 3-5 minutes, remove and enjoy while hot with Chinese Worcestershire sauce.

salted egg yolk, divided and rolled into small balls
1/4 cup
finely chopped carrot

pepper

sugar
2 tbsp
corn flour
1 tbsp
Chinese wine
2 tbsp
sesame oil
