PREPARATION:
1. Wash the prawns: shell and de-vein. Remove the heads and tails, and chop coarsely. Sauté in oil
until just done, follow with the carrot and continue cooking until done. Season with sugar, salt
and pepper. Add the spring onion, stirring well. Pour in the com flour batten stir until the mixture
thickens, then remove from the heat.
2. Mix both kinds of flour together; stir in the hot boiling water When it is warm, add the oil
and knead until it becomes a soft dough and does not stick to your hand. Roll into long sticks
about I 72 cm in diameter. Cut into cubes about I '/a cm long, then re-roll into small balls.
Continue until all the dough is used up. then wrap in a damp cheesecloth.
3. Re-roll each ball into a thin sheet; spoon 2 tsp of the prawn filling in the center of each
sheet Fold the sheet in half, pinch the edges to seal and place in greased dim sum trays.
4. Bring the water in a steamer to a boil: reduce the heat Place the dim sum trays in the steamer
and steam over boiling water for 5 minutes until the dough is cooked through (the filling should
be visible). Remove and enjoy while still hot with Chinese Worcestershire sauce.
