PREPARATION:
1. To make the sauce: mix together the vinegar, sugar salt and soy sauce and bring to
a boil. Remove from the heat and allow to cool. While still warm, blend finely with the
red spur chili. Remove from the blender and set aside.
2. Pound the coriander roots, garlic, pepper and salt together well (using a pestle and
mortar). Add the fish meat and continue pounding until well combined.Transfer to a mixing
bowl, add the egg white and knead until stiff. Add the Shiitake mushrooms, seaweed and
soy sauce; knead thoroughly.
3. Roll out a wanton sheet, heap I tbsp of the filling in the center of each sheet. Use
your palm and fingers to gather the sides of the sheet to form a nice dumpling; shape
and make them stand upright Place in greased dim sum trays, and drop a green pea on top
as a garnish.
4. Steam the dumplings over hot boiling water for 5-7 minutes, remove and serve hot
with the sauce.
